Rainbow Chard
The green side dish a lot of people are sleeping on
Rainbow chard is a pretty easy, healthy, delicious side that a lot of people ignore because they don't know what to do with it. We're gonna teach you!
The lime is a little unexpected, but it truly does help to cut some of the heavier olive oil feeling of the dish. Add it right at the end, while still in the pan but before serving, for optimal impact.
Ok, I'm not gonna lie - a pile of greens is hard to make look really pretty. But using the rainbow chard helps because the different color stalks stand out and make it appear a bit more appetizing!
How to Make It
- 1
The most important thing when prepping is to separate the stalks from the leaves. Slice the leaves off the stalk and chop the leaves up.
- 2
Slice the stalks lengthwise - they're quite fibrous and this breaks it up. Then chop into smaller pieces.
- 3
Toss the stalk pieces into a pan first with some olive oil, cover and saute for about 5 minutes, occasionally stirring so they don't stick to the bottom.
- 4
When they are looking soft, pile the leaves on top of them, reduce heat slightly, and pour 2-3 tablespoons of olive oil on top of the leaves.
- 5
Cover the pan again - smush those leaves down with the lid if you need to. They'll be fine.
- 6
Let this steam and saute for about 5 minutes, then stir it up again, starting to get the leaves down further and stirring the stalks up towards the top.
- 7
Let it steam and saute for another 5 minutes. All the leaves should be pretty broken down now.
- 8
Keeping the heat on, add garlic salt and the juice of one lime to cut some of that olive oil richness and add flavor. Add a pinch of red pepper flakes if you like.
Ingredients
- 2 bunches of rainbow or red chard (note: this works with most greens - more bitter ones like mustard greens may need a little more careful spicing)
- Olive oil
- Garlic salt
- 1 lime
- Red pepper flakes or cayenne powder

Sweet Potato Cubes
We love sweet potatoes because they're healthy, and quite flexible. Easy to use for dinner and lunch, but also breakfast - pop an egg on those for a magic morning boost!
The Pinch
Getting your spices right! Especially that z'aatar and curry - they give it an international flavor that we don't always get in our dishes at home, so we love adding those.
The Polish
Sweet potatoes have a gorgeous orange appearance.

Can't be Beet Salad
I love beets! They're delicious, but - and this isn't one of my favorite parts - when you're cutting them up, they do stain your hands, so be aware! That said, they're really delicious, quite healthy, and they have a really nice, juicy flavor. I love putting them in salads with different types of cheeses and more.
The Pinch
For the dressing - one caveat: we love to make magical, complicated, unique dressings and they're never quite the same.
The Polish
When plating with the dressing drizzled just right, play with the radish and beets as the color pops.

Marinated Flank Steak
Sometimes you just need a good steak! But meat is getting expensive. One of our favorite budget-friendly recipes that can feed a family is a nice flank steak. But you have to make sure to marinate it well - ideally 12 or more hours.
The Pinch
It's important to let the garlic salt absorb before you pour the marinade over - otherwise the marinade will just wash it away and you'll lose some of that direct saltiness we love in the meat.
The Polish
Slice flank steak against the grain in very thin slices for the most tender pieces.
